In a baking bowl, mix water, rice flour and wheat flour well. Now add turmeric and saffron. Chop young onions very small and mix well with the dough. Let the dough rest for 2 hours.

In the meantime, rinse the meat well, dry it with kitchen paper and chop it.

Rinse the shrimp, remove the shells and innards.

Peel onion and cut into narrow strips.

Clean carrots and cut out flowers.

Rinse cucumber and cut into slices.

Rinse and drain soy germs.

Briefly rinse and dry mint sprigs.

In a frying pan, heat 2/3 of the oil together with a few slices of onion, then add the meat and shrimp, season with pepper, season with salt and fry everything together until well done.

For the sauce, mix garlic, juice of one lemon, lukewarm water and nuoc mam sauce, put everything together in a sauce pan.

Heat frying pan with the remaining oil, swirl oil in the frying pan so that the bottom is evenly covered with it.

Spread 1 ladleful of batter evenly in the frying pan, re-grease the edge of the pan with a little oil so that the batter does not burn under any circumstances. Let the dough brown slightly, shaking the frying pan every now and then.

Put the prepared filling and the soy germs on the dough form.

Cover the frying pan with a lid, set the temperature on the spot.
