For the Gorgonzola pasta salad, cook the pasta in salted water until al dente, according to the package instructions. Rinse with cold water and mix in a little olive oil to prevent the pasta from sticking together.

Cut the gorgonzola into cubes. Sort the arugula, wash and pat dry. Chop coarsely.

Mix the ingredients for the dressing. Mix the cooked pasta with the cheese and arugula and marinate with the salad dressing. Season with salt and white pepper.

Leave the Gorgonzola pasta salad in the refrigerator for a good hour and then serve at room temperature sprinkled with chopped and toasted walnuts.
