Beat the yolks and half of the sugar until creamy, then add the starch flour, salt, lukewarm milk and lemon zest hearty. Whip the egg whites until very stiff, mix with the remaining sugar and the baking powder and fold into the yolk mixture.

Over a wire rack, melt the shortening in a large skillet on low heat. Pour in the mousse and cover with a warmed lid. Bake like this for 10 minutes. The slap should be dry and light yellow on the bottom.

Spread the top with the jam, then fold up, sprinkle with powdered sugar and bring to the table.
