A great cake recipe for any occasion:

Almond Tuiles: Preheat the oven to 190 degrees.

Line a large baking sheet with parchment paper.

Whip the egg whites to a coarse bubbly foam, then beat in the sugar. Gently stir in the flour, butter and almond kernels. Place the dough in slices of about 10 cm ø on the baking sheet. Bake in the oven for 7-8 min, until they have taken on a hint of color. Let the waffles stand for 1-2 seconds, then lift them on the spot from the baking sheet with a spatula and place them over the edge of a large baking dish so that they take on a domed tile shape as they set (roof tile=french tuile).

Make the remaining tuiles the same way, reusing the parchment paper. Once the wafers have cooled, keep in an airtight tin.

Omit the almond kernels. When you remove the waffles from the baking sheet, fold them in place tightly around the greased handle of a wooden mixing spoon. Cool slightly, then slide the rolled waffles off the stem base and place on cooling racks.
