For the gingerbread, mix the whipping cream, sour cream, sugar, honey and gingerbread spice in a large bowl. Add the flour with a wooden ladle.

Dissolve the baking soda in a cup of lukewarm milk and gently fold into the mixture. Pour the liquid batter onto a deep baking tray lined with baking paper and bake in a preheated oven at 180° C for about 1 hour.

Now brush the still warm gingerbread thinly with honey and cut into bite-sized pieces.
