For babies and children: quick lunch

Fresh peas have unjustly gone out of fashion: They are more tender than canned peas and taste almost sweet. Just the thing for little toddlers. Babies from 8 months of age can also eat this dish – but then 1/3 of the pancake is enough for one meal.

Mix egg with wholemeal flour. Gradually stir in buttermilk, germ oil, a little salt and the sesame seeds, let the batter rest for a while. In the meantime, pop the pods and scoop out the peas. Melt a teaspoon of clarified butter in a coated frying pan, spread the peas evenly in the frying pan and sauté very briefly. Whisk the batter with a dash of mineral water and spread evenly over the peas, place a lid on top and bake the pancake for 1 to 2 min until golden brown. Next slide on the lid, place any remaining fat in the frying pan and turn the pancake over to the other side, finish baking. Spread with creme fraiche and fold.

If you would rather serve your child a sweet pancake, for example because they don’t like peas, you can use soft fruit. Peach wedges and/or raspberries or even strawberries are ideal.
