For 2 loaves (about 1 kg of dough):












Instructions:

Heat the water with honey and mix with yeast.

Add the remaining ingredients to the water mixture and knead into a dough.

Cover it with a cloth and let it rise at about 35 °C (about 30 minutes).

Knead the dough again, divide in half and form into loaves. Brush with lukewarm water and sprinkle with some sunflower seeds and oat flakes.

Let rise again (about 30 minutes).

Bake the wholemeal rye bread in a preheated oven at 200 °C for about 30 minutes.
