Peel the potatoes cooked the day before, cut into slices, halve again if necessary. Dice the onions, apples, cucumbers and sausage. Soak the prepared matjes herrings or fillets and cut them into small pieces. Mix all the ingredients with the mayo or salad cream and leave for a long time. If the lettuce is too dry, add a little cucumber liquid.

Season well before serving. Place egg quarters around the edge of the salad and form a cucumber fan in the center.

Serve with frankfurters or other sausages. However, it also tastes good without sausages. And: The longer it sits, the better the leaf salad tastes.
