Instructions:

A simple but delicious cake recipe:

Knead the sifted flour with the butter, powdered sugar, vanilla sugar, salt and egg yolks and let it rest in the refrigerator for 2 hrs with the lid closed.

Preheat the oven to 200 °C. Roll out the dough, spread the bottom and sides of a cake springform pan and add the peas. Bake the dough on the second rack for 30 minutes. Pour out the peas.

Pour just under half of the pear jelly over the drained pears. Stir the curd with the sugar, the juice of one lemon and the remaining pear brandy. Allow the soaked gelatine to melt in the heated pear juice and stir into the curd. Place the pears on the bottom, spread the curd like a dome over them and set. Remove a portion.

Stir the remaining whipped cream with 3/4 of the brittle and spread over the cake. Decorate with jelly and brittle.
