For the glazed peppers, foam up the alpine butter – add the peppers and pears, glaze briefly. Add the vanilla sticks and the vanilla pulp, add honey – deglaze with the pear juice. Cook on low heat for about 5 minutes. Add the grapes. Season to taste with the pear brandy – cool briefly and serve decoratively, for example with pine nuts.
