A great fish recipe to make yourself:

Melanzani cut lengthwise into narrow slices and make in a little clear soup in about 5 min, following drain.

Cut or mortar basil leaves with olive oil, season with pepper and salt and mix with bread crumbs. If you like, add a little bit of pressed garlic.

Place four slices of melanzana on top of each other, overlapping, and spread with the basil mixture. Fold the fish fillets in it and roast them in olive oil on both sides for 4 minutes.

Arrange and pour over Beurre Blanc, garnish with browned pine nuts if desired.

Orange beurre blanc: In a saucepan, bring shallot, cardamom and orange zest to a boil with wine and orange juice. Add juice of one lemon, pepper and salt and bind (assemble) with butter flakes.
