Fagioli Con Le Cotiche – White Beans with Pork Rind

Soak the beans in cold water for one night and make a day later without salt. Scrape the rinds well and put them in a saucepan.

Pour enough water to cover them and do 15 min. Drain the rinds, cut them into small strips and put them in a clean cooking pot. Then cover again with cold water, season with salt and make. Chop the ham, garlic, a handful of parsley and a few leaves of basil. Put the chopped mixture with a little bit of oil and the chopped onion in a clay pot form and sauté. Add the peeled, seeded tomatoes cut into small pieces, season with salt and season with pepper. After 20 min. add the drained beans, the rinds and a little bit of their water. Cover and cook for another 15 minutes.

Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
