Instructions:

300 g Gruyère cheese, mildly grated

Boil milk, pour in semolina while stirring. Boil for approx. 15 min. at low heat to a plump paste. Remove the pan from the fire and add the cheese. Season the mixture and cool. Add the egg yolks and mix well. Whip the egg whites to stiff peaks and fold them just into the mixture.

Put the mixture into a greased baking dish and bake in a hot oven at 180 °C for 40 minutes, then at 220 °C for another 15 minutes.

Serve immediately.

Serve with leaf salad.
