Mix crushed meringues, ground almonds and cinnamon, then add whipped cream.
Put the mixture in a mold in the freezer for one night. Take it out again and turn it over: it is almond or almond ice cream parfait.
It is served with a seasonal grape sauce.
Take about half a kilo of blue grapes and boil them with a tablespoon of sugar until they burst.
Then strain them through a sieve. Thicken the cooled juice with a teaspoon of starch, which can be mixed with cold water, grape juice or sweet must.
Heat, the sauce must be creamy.
We added a little bit of apple concentrate and seasoned it with ginger.
It is really a matter of taste, you can also add very well Birnell (pear syrup) for sweetening.
It turned out that tastes are indeed different, but as we know, one’s own taste is the best cook, also when varying.
We sprinkled almond slivers over the ice cream and reserved the most beautiful grape berries for decorating.
