Roasted Peaches with Goat Cheese and Honey Fruits

Preparation (about 35 min):

Rub the peaches with kitchen paper, cut them in half, remove the seeds and cut the bottom a little bit. Crumble the goat cheese, mix with a little bit of thyme and season with salt, pepper and chili flakes. Marinate the berries with lime juice and a tiny bit of honey. Sauté peach halves very briefly in hot olive oil and place on thyme sprigs.

Put goat cheese on top, drizzle a little honey on top and sprinkle chili flakes on top. Bake everything together in a heated oven at 190 °C (with top heat) for six to seven minutes. Clean the arugula well, drain, arrange as a bed on a flat plate and place two peach halves on each. Arrange the marinated berries all around, drizzle with cooled pressed olive oil and garnish with a sprig of thyme.
