For rose petal jelly, remove white stem ends from rose petals and heat in wine. Leave to infuse for 1/2 hour. Strain the blossoms.

Add water and jelling sugar to the decoction and now bring to a boil. Boil for 3 minutes until bubbling. Cool slightly and then stir in the rose water.

Fill the rose petal jelly into glasses.
