For this recipe of artichoke heart-orange leaf salad, the first thing to do is to wash the lettuce and cut it into bite-sized pieces.

Peel the onion and cut into fine rings. Wash the parsley, spin dry and chop finely.

Drain artichoke hearts (reserving the broth) and cut into eighths.

Peel orange(s) so that the white part of the peel is also peeled. Collect the juice in the process. Place the orange wedges over a bowl and remove the thin membrane so that the juice is also collected.

For the marinade, mix the vinegar, artichoke juice, orange juice, olive oil and 2/3 of the parsley and season with sugar, salt and pepper.

Mix the prepared ingredients for the artichoke hearts and orange leaves salad together and finally drizzle with the marinade. Arrange on a platter and sprinkle with the remaining tablespoon of parsley.
