Crispy Arctic Char Fillet with Stem Cabbage Vegetables

Instructions:

Clean stem cabbage and remove hollow stems. Wash the rest and pluck off the leaves.

Season char fillets on the flesh side with the ground coriander and mustard seeds.

Blanch the peas in salted water and rinse with cold water.

Heat olive oil in a non-stick frying pan. Place the fish fillets skin side down and fry over medium heat. Turn over for a brief moment, lift out of pan and keep warm.

Sauté shallots and garlic with butter, add stem cabbage and cashews, toast lightly and season with salt and pepper. Add peas and chopped mint and season with lemon juice, salt and pepper.

Arrange the Arctic char fillet with the stem cabbage vegetables nicely on a plate.
