Cut away the fat from the giblets, finely chop the giblets. Chop shallot and sauté in the warm butter until soft. Add meat and fry briefly.

Remove from frying pan, deglaze stock with soup and sherry. Cook at high temperature until 1/2 dl liquid (based on original 1 dl soup and 1 dl sherry).

Add sauce cream, let it bubble up and season. Remove the pan from the fire, add the giblets again and let everything cool down.

In the meantime roll out the puff pastry. Spread the pastry in small portion molds (about 4, 5 cm small). Spread the filling evenly in them.

Cut out puff pastry lids, brush the edges with egg white and place on top. Brush the lids with egg yolk.

Bake in a 220 degree oven for 12 minutes. Bring to the table hot.
