For the zucchini carpaccio, first cut the zucchini into very narrow slices using a peeler. Drape the slices on 4 plates.

Remove the skin from the garlic, crush it and stir it through with lemon juice, salt and pepper. Stir in the oil and drizzle the sauce evenly over the zucchini carpaccio. Garnish with dill.
