Bread Soup with Cabbage

Cut the bread into small cubes. Peel and finely chop the onion.

Clean the soup vegetables and chop them finely as well.

Heat oil in a saucepan. Sauté onion over medium heat until translucent.

Add bread and greens, stir-fry for about 1 minute, pour in soup, bring to a boil and simmer soup with lid closed at low temperature for about 5 minutes.

In the meantime, wash the cabbage and cut it into very fine strips. Wash the chives and cut them into small rolls.

Add the cabbage to the soup, let it bubble up and simmer for 1 minute with the lid closed.

Season soup with salt, cayenne pepper and coriander.

Serve, garnish with crème fraîche and chive rolls.
