Heat the vanilla and whipped cream and gently bubble for 5 minutes, stir in the sugar. Remove from heat, cool a little, then beat with egg yolks until creamy. Fold the gelatine into the mixture and chill in a water bath made of ice cubes.

Stir in the whipped cream and leave to cool.
