For tagliatelle with tomato sauce, cook the spaghetti in salted water until al dente. Clean and wash the carrots and dice them with the celery and leek.

Peel and chop the onion and garlic. Heat oil in a pan and fry everything in it. Chop thyme and pluck 5 leaves.

Season pan-fried vegetables with salt, pepper, thyme, oregano and basil. Deglaze with vegetable soup and simmer for 10 minutes.

Add tomatoes and stir in. Continue to simmer for 10 minutes. Grate Parmesan cheese. Pour sauce over pasta.

Serve the tagliatelle with tomato sauce sprinkled with parmesan and plucked basil.
