For the basil ice cream with nuts, first toast the hazelnuts in a pan without fat until fragrant. Set aside and allow to cool.

Beat the egg yolks with the sugar until foamy. Heat the whipping cream in a saucepan and stir in the egg yolk mixture. Continue stirring until the mixture thickens nicely. It must not get too hot, however, so that the egg yolk does not curdle. Strain and let cool.

In the meantime, wash and pluck the basil. Puree together with the crème fraîche and stir in the agave syrup. Stir this mixture into the egg yolk and cream mixture. Then stir in the chopped nuts.

Freeze the basil ice cream with nuts for several hours.
