Instructions:

Soak the sweetbreads in cold water for at least 2 hours. Meanwhile, skin the grapes and soak them in Sauternes.

Place the sweetbreads in a saucepan, cover with cold water and bring to a gentle boil. Boil down for 5 minutes, lift out of the saucepan and quench with cold water. Then skin and clean the sweetbreads. Cut into slices, season with salt, season with pepper and roll in flour.

Shake off excess flour and fry in melted butter until golden. Extinguish with the Sauternes and cook for 25 minutes at low temperature with the lid closed. 5 min before the end of cooking add the grapes and olives.

Arrange the sweetbreads on the hot plate, keep warm at the oven door. Reduce the sauce by 1/3, mix in the crème fraîche and pour over the sweetbreads.

A very delicate but a little bit expensive dish for festive occasions.
