Hard boil the eggs at the beginning and set aside to cool. During the cooling time, clean the mushrooms well and chop them coarsely, season lightly with salt.
Cut the chives into rolls.
Mix yogurt, mustard, mayonnaise and whipped cream, season strongly with a little bit of salt and freshly ground pepper, maybe add a little bit of juice of a lemon (matter of taste!).
Peel the eggs, which have cooled in the meantime, and also chop them large.
Mix the mushrooms and eggs with the sauce and sprinkle with the chive rolls.
Dark bread tastes just as good as white bread or toast.
Our tip: Fresh chives are much more aromatic than dried ones!
