For the pasta, sift the flour onto a pasta board. Make a well in the center and pour in the beaten eggs and salt. Starting from the hollow, first mix the egg and flour with your fingers, then with your hand. Knead the resulting dough until it comes away from your hands and from the pasta board.
Flour the pasta board freshly and divide the dough into three parts. Roll out each into a thin sheet of dough, about 2 mm thick, and let dry for 1 hour on a spread out dish rack.
Then dust each sheet of dough with flour on the surface, roll up loosely and cut into small noodles about 1 cm wide with a sharp kitchen knife. Lay out loosely on the pasta board and let dry another time for about 1 hour.
In a large saucepan, bring salted water to a boil and cook the noodles in the bubbling water for 3 to 4 minutes. Drain and bring the pasta to the table on the spot.
