Blanch the tomatoes hot (scald), remove the skin. Cut tomatoes in half, scrape out seeds and cut flesh into pieces.

Clean mushrooms and cut into slices. Finely chop marjoram and thyme leaves. Peel and finely dice onion.

Peel garlic. Cook spaghetti in bubbling salted water according to package directions until al dente. In the meantime, sauté the diced onion and crushed garlic in hot fat until translucent.

Add the mushrooms and sauté briefly. Add herbs and tomatoes and sauté briefly. Season to taste with salt and freshly ground pepper.

Cut coppa or bacon into wide strips. Drain the pasta, rinse briefly and mix with the sauce and the coppa. Serve with freshly grated cheese.
