Rinse the orange with hot water and cut the peel into thin strips. Squeeze the fruit. Cut the pork on the skin side and marinate in the juice with the orange peel for about 3 hours. Drain the meat, rub with salt and pepper, sear all over in hot oil on 2 or automatic heat 9 to 10, place in a closed roasting pan in the oven.

200 to 220 °C , 2nd sliding rack v. U.

180 to 200 °C , convection oven 90 min.

After 20 min turn to the other side and extinguish with the orange marinade.

Peel onions and garlic. Cut onions into slices, garlic into slices and after another 20 min cooking time add to the roast form, cook for another 50 min.

Remove the roast from the sauce and let it rest. Bind the sauce with flour, season it and bring it to the table with the sliced meat.
