Instructions:

Prepare all the ingredients for the zucchini and potato loaf and then mix. If the mixture is too soft, add semolina or flour or breadcrumbs. Spoon small loaves into the hot oil, flatten slightly, turn, remove, drain on paper towels and serve immediately.

Serve with a crisp green salad or tomato salad.
