PREPARATION Briefly poach (scald) the tomato in boiling water, peel, core and dice. PREPARATION In a saucepan, bring plenty of salted water to the boil, add the spaghetti and cook until al dente. In the meantime, for the carbonara sauce, cut the ham into small cubes. Heat butter in a pan and sauté the chopped onion and ham in it. Season with salt and pepper. Pour in the cream and bring to the boil. Add the chopped parsley and the diced tomatoes and season again with salt and pepper. Strain the spaghetti that has been cooked al dente in the meantime, drain it and mix it with some olive oil. Arrange the spaghetti in deep plates and cover with the ham sauce. Sprinkle with freshly grated Parmesan.
