Carve rabbit into 8 pieces, brown in oil, season with salt and pepper, place in a watered Roman pot.

Crush ginger bulb, slice orange, remove peel from shallots, add fresh thyme. Cover and cook at 225 °C for 50 minutes. Sieve the gravy, thicken with whipping cream and sauce binder, season to taste.
