This distinctive leaf salad tastes good only if you use tender, young rhubarb. It also goes well with fried fish.

Cut the rhubarb into finger-length pieces, sprinkle them with sugar and let them steep for thirty minutes, then steam them in their own juice for five minutes, let them drain and cool.
