Instructions:

First, cut red cabbage into thin strips. Peel and coarsely chop the onion. Remove the core of the apple and cut the flesh into cubes. Peel the ginger and grate finely.

Melt the sugar in some butter and caramelize the red cabbage in it.

Add the onion and rice. Season. Deglaze with red wine and pour in the vegetable soup. Cook until the vegetables are soft.

Add the apple pieces together with the apple juice just before the end. Finely puree the soup.

Arrange and serve.
