For the red cabbage salad, finely mash the feta cheese with a fork. Mix the buttermilk, sour cream, oil and vinegar with the feta cheese and make a smooth sauce.

Coarsely grate the red cabbage. Cut the fennel bulb into narrow strips. Cut the apple into thin slices.

Fold the sauce into the salad ingredients and serve the red cabbage salad decorated with the fennel greens.
