Remove the peel from the kohlrabi, grate into strips on the coarse raw vegetable grater. Cut the white of the leek into the finest strips.

Mix the freshly grated horseradish, the tomato puree, a splash of vinegar and a little salt to make a spicy sauce. Season with enough sugar to give the sauce a little more flavor. Add leek strips and kohlrabi shavings and marinate everything together for an hour in a cool place.

Garnish with leaf lettuce and tomato slices. Serve sprinkled with chives.

Our tip: Fresh chives are much more aromatic than dried ones!
