Ziger dressing:


Pluck the lettuce leaves into bite-sized pieces. Divide evenly into coupe glasses or salad plates. Remove peel from radish and carrot. Remove notches lengthwise all around with a special knife or with a knife. Keep the cut-out shavings for garnish. Finely slice radish and carrot. Spread evenly on the leaf lettuce.

Mash the ziger with a fork. Remove the stems from the parsley. Place the water, ziger and parsley leaves in a tall container with the other dressing ingredients and blend with a hand blender. Pour over the leaf lettuce. Form loops of the radish shavings and place on top as garnish.
