Finely dice the shallots and stir with the remaining ingredients for the salad dressing. Chop the kitchen herbs and fold into the salad dressing.

Clean the lettuce, rinse and drain well. Divide evenly among 4 plates. Evenly distribute the cleaned and sliced radishes on top.

Sear the saddle of rabbit in the oil on all sides and finish roasting in about 5 minutes. After about 1 minute, add the rabbit livers and fry. Season meat with salt and pepper and cut into slices of about

1 cm thick slices.

Pour salad dressing over salad and arrange meat on top.
