For the Rudolph cupcakes, first preheat the oven to 160 °C hot air. Line a muffin tray with muffin cups.
Mix flour with baking powder, baking soda, salt, cinnamon and cardamom. In a second bowl, beat egg, sugar, milk and butter. Fold the flour mixture into the egg and butter mixture. Stir just until all ingredients are moistened.
Coarsely chop the chocolate and fold in briefly as well.
Pour the batter about 3/4 full into the muffin cups. Put into the oven and bake for about 20 minutes (test with a stick). Remove and let cool.
For the decoration, melt the chocolate over a water bath. Brush the top of the muffins with it (leave a little bit for the pupils). Place a Hussarenkrapferl on each muffin and place a candied cherry on top of the jam. Place two pretzels on each muffin as antlers. Place the white chocolate lentils as eyes between the pretzels and the hussar doughnuts. Pour the rest of the melted chocolate into a piping bag with a very small hole and pipe pupils.
Let the Rudolph cupcakes set a bit and serve.
