Preparation (about 45 min. including resting time):

Knead all the ingredients into a smooth dough, wrap it in plastic wrap and let it rest for about half an hour. After the resting time, the dough can be worked and shaped with the pasta machine.

1. ) Saffron pasta:

Mix 1 pinch of ground saffron dissolved in 1 tbsp of water into the basic dough.

2. ) Mushroom noodles:

Work 15 g of ground, dried mushrooms (morels, lord’s mushrooms, champignons) into the dough.

3. ) Green noodles:

Add 3 tbsp pureed spinach and an additional 1 tsp flour to the basic dough form and knead together well.

4. ) Red noodles:

Add 2 tbsp of paradeis pulp, maybe 25 g of dried and ground paradeis to the basic mixture.
