For the Buchteln, all ingredients should be at room temperature.

Sift the flour into a baking bowl, make a well in the center and crumble the yeast into it, pour a little warm milk over it and sprinkle with a pinch of sugar. Leave to rise in a warm place for about a quarter of an hour.

Heat the butter, cover the dampfl with flour and only then add all the other ingredients and knead into a medium-firm dough until the dough comes away from the baking bowl. Cover and let rise in a warm place for at least 1 hour.

Knead several times. Butter an ovenproof dish well, divide the dough into 8 to 10 pieces. Form them into balls. Flatten a little and put jam in them. Close well, place in the mold with the opening facing down. Bake the Buchteln in a heated oven at about 180 degrees for 40 to 45 minutes until golden brown.
