Parsley rinse, shake well dry and chop finely. Remove the skin from the onion and chop. Saute both in butter until onion pieces are soft. Coarsely chop feta cheese.
Soak bread rolls in water, squeeze well and chop. Knead together in a baking bowl with the mince, onion-parsley mixture and eggs. Season with a tiny bit of salt, pepper and paprika.
With wet hands, form small balls from the minced dough, pressing a cube of feta cheese into the center. Roll the meatballs in breadcrumbs and fry in hot fat until crispy brown on all sides in about 5 minutes. Arrange on lettuce leaves in a baking dish, bring to the table on the spot.
