For the marinade, thoroughly mix the orange juice with vinegar, mustard, salt, pepper and sugar until the sugar has dissolved. Finally, stir in the olive oil. Pour into a canning jar and store in a cool place.

For the salad, peel oranges and cut into slices about 5 mm thick. Peel the onion and cut into fine rings. Clean lamb’s lettuce, wash thoroughly and drain very well. Arrange orange slices with onion rings and lamb’s lettuce on plates, add ham decoratively and drizzle everything with the prepared marinade.

Sprinkle the salad with pink pepper and serve.
