For the cheese spaetzle, first peel the onion and cut 3/4 of it into rings, the rest into small cubes. Also remove the peel from the shallot and cut into fine cubes.

Now mix water, flour, eggs, oil and season with salt, pepper and nutmeg. Mix everything to a smooth dough and beat with a wooden spoon until it bubbles.

Now bring salted water to a boil, place a spätzle strainer on top and press the dough through with a pastry card. In the meantime, melt butter in a pan and sauté the diced onion in it. As soon as the spaetzle rises to the surface, skim it off with a skimmer and add it directly to the pan. Also add the grated cheese and toss well.

Finally, flour only the onion rings and fry in a pan with butter until golden.

Arrange the cheese spaetzle on a plate, sprinkle with freshly chopped chives and spread the onion rings on top.
