For Okroschka, first boil potato cubes in enough salted water until soft, strain and let cool.

Separate the whites and yolks of the hard-boiled eggs. Dice egg whites and place in a large bowl with potatoes, radishes, sausage, gherkins and pickled gherkins. Mix with buttermilk, sour cream, beet powder and pickled gherkin stock.

Mix the egg yolks with the vegetable stock first and then add to the mixture. Season to taste with salt and pepper.

Pour okroshka into bowl or soup plate and serve sprinkled with horseradish and dill.
