Have fun preparing this mushroom dish!
Clean the mushrooms with a wet utensil, cut them into slices and fry them in 4 tablespoons of olive oil – add shallots, garlic and chili. Fry everything quite hot – maybe in two frying pans, if you don’t have a big frying pan. Season mushrooms with salt and pepper, add parsley, juice of one lemon and layer everything together in a baking dish. Sprinkle with parmesan and breadcrumbs – pour a little olive oil on top and gratinate for 8 min. in a heated oven at 200 degrees with top heat. Be careful: cheese burns quickly.
Cut a cap from the tomatoes, remove the core and flesh – fill with the fried mushrooms, sprinkle with parmesan and breadcrumbs and put everything together for 15 min. in the oven heated to 200 degrees.
Both versions are delicious with fish, meat or grilled food, but also solo with baguette and red wine.
Do not worry about seasoning the mushrooms. If you like, add more chili or garlic or maybe a little dried thyme and rosemary. Have fun!
