For the recipe Chinese fruit salad, wash the lemon hot, dry and grate the peel. Cut in half and squeeze out the juice. Put the Chinese rice wine, lemon zest, lemon juice and water in a pot.

Add the cloves, cinnamon stick, fine crystal sugar, gingerbread spice, star anise, vanilla bean and fresh ginger.

Gently heat the mixture in the pot until the sugar dissolves. Now let it bubble up. Reduce temperature and simmer on low heat for 5 min. Set aside to cool completely.

Pour off the syrup, removing the seasonings. Stir in the cashews, cover with plastic wrap and let cool in the refrigerator.

In the meantime, prepare the fruit: Cut the kiwi in half, destem the strawberries, and slice the star fruit, kiwi, and strawberries.

Place the fruit in a suitable bowl with the lychees and ginger. Mix gently.

Pour the syrup over the fruit, decorate with finely chopped mint and bring the Chinese fruit salad to the table.
