For the mulled wine tiramisu, separate the eggs and beat the egg whites with half of the sugar until stiff and the remaining sugar with the egg yolks until foamy. Mix in the mascarpone and finally carefully fold in the beaten egg whites.Fill the mascarpone cream into a piping bag (alternatively just take a freezer bag and cut off a corner). Pour a layer of mascarpone cream into a nice dessert glass.

Pour the mulled wine into a shallow container and dip the speculoos in it. Layer the mulled wine speculaas pieces on top of the mascarpone cream.

Then alternate the cream and the speculoos again. Finish the tiramisu with the cream.

Chill in the refrigerator for a few hours. Before serving, sprinkle the tiramisu with a little cinnamon.
