Place eggs in a large enough bowl. Add milk, salt and pepper and whisk lightly. Melt butter in a heated frying pan. Meanwhile, toast the egg mixture so that the surface remains liquid. Add the grated halloumi and fold over 1/3 of the omelet. Transfer to a preheated platter and bring to the table with fresh leaf lettuce.
