As fish goes actually everything together what is white and has a firm structure, from the sole to the pollock. And there the marinating time is of course a little bit different, the more expensive the fish, the shorter the time (sole 2 min).

Squeeze the lemon, remove the peel from the onion and cut into fine rings, rinse the parsley and chop finely. Mix the juice of one lemon with the other ingredients to make a marinade and put the fish fillets in it.

2. After a few minutes, drain the fillets, season with salt and pepper, pull through the flour and roast.

Serve with parsley potatoes, brown butter as sauce and green leaf salad.

If you like, you can make another sauce from the marinade, or roast the onion rings until crispy.
